Evaluation of the quality of alcohol vinegars for domestic

Abstract

Vinegar is a natural flavoring and preservative whose use in the food industry is wide. In the research, the objective was set to partially evaluate the quality in various brands of domestic alcohol vinegar through physical and chemical analysis. A simple random sampling was carried out, represented by ten (10) brands marketed in Ciudad Bolívar. The results show that all brands comply with values below pH = 3. Regarding total acidity, M5 presents a total acidity of 5.0% with a standard deviation of <0.01%. On the other hand; M3, M4, M9 and M10 presented values slightly above the 5% established by the standard, while M1, M6, M7 and M8 values slightly below 5%. Finally, M2 presented the lowest concentration 3.5% with a standard deviation of 0.02%. Regarding densities, all brands comply with the standard, however M2 with a density of 1.0036 g·mL-1 with a standard deviation of 0.0003 g·mL-1, is below the established range. In conclusion, it was found that M5 is the product with the best quality of all those evaluated, on the other hand M2 showed some faults in total acidity and density.

José Castro Soto , Center for Studies in Chemistry, Territorial Polytechnic University of the State of Bolívar, Ciudad Bolívar, Venezuela

Graduate in Chemistry from the Universidad De Oriente (Núcleo de Sucre). He has been head of the Laboratory Division (Quality Control Management – HIDRO-BOLÍVAR C.A.). With more than 15 years of experience in university education at the University Institute of Marine Technology of the "La Salle" Foundation of Natural Sciences (IUTEMAR-FLACN) and at the Territorial Polytechnic University of the State of Bolívar (UPTBolívar). Currently, he serves as Head of the Department of the National Training Program in Chemistry (PNFQuí-mica) at the UPTBolívar. She is currently a participant in the Master's Degree in Education Sciences at the Simón Rodríguez National Experimental University (UNESR).

Nairobis López Martínez. Mining Engineer graduated from the Universidad De Oriente (Núcleo de Bolívar), with 13 years of experience in University Education at the National Experimental Polytechnic University of the Bolivarian National Armed Forces (UNEFA), at the Antonio José de Sucre University Institute of Technology Ciudad Bolívar (IUTAJS) and at the Territorial Polytechnic University of the State of Bolívar (UPTBolívar). Currently, he serves as head of the Department of the National Training Program for Quality and Environmental Systems (PNFSCYA) at UPTBolívar. She is currently participating in the Master's Degree in Environmental Education at the Pedagogical Institute of Maturín Antonio Lira Alcalá (UPEL) and in the specialization in Electric Energy with a mention in Energy Efficiency and Alternative Energies at the Territorial Polytechnic University of the State of Bolívar (UPTBolívar).
